September 27, 2018 - Turns out the Pappas family were exactly right when they decided Houston could use a serious upscale barbecue-centered spot with dinner hours and all the comforts of a full-service restaurant. Their big Bay Area Southern smokehouse has been thronged since Day 1 with guests in all the colors of our regional rainbow putting away hulking beef ribs, gangly long-bone pork chops or juicy smoked-chicken sandwiches hiding a cache of pimiento cheese. The brisket’s USDA Prime; the tender, softly barky ribs cut St. Louis-style. Classic blues chugs on the sound system. A long, convivial bar trades in sophisticated cocktails, craft beer and wines smartly geared to red, smoky meats. Details right down to the spiffy sides and the retooled barbecue sauces are spot on. And the service? Attentive in true Pappas fashion.
WHAT TO ORDER: Astonishingly good crab-and-smoked-brisket cakes; moist-side brisket; festive pulled-pork nachos; Hen House sandwich; Prime Burger with fresh-cut fries; corn pudding; braised collards with buttery turnips folded in; Mississippi Mud Slide cake.
